The main goal of the trip to the market was to get ingredients for sauce d’aubergine. It seemed the simplest recipe of the African ‘sauces’. Plus, the eggplants here are wonderful. Except I did not use beef, because I don’t trust the beef here after watching a cow consume an entire plastic bag.
